Launch of two new guides and two posters to support the production of high-quality maple syrup


As part of the Innov’ACER Express event held on June 10th in Victoriaville, Centre ACER launched two new guides and two posters designed to support maple producers in continuously improving their practices and producing high-quality maple syrup.

 

The guide Utilisation et étalonnage des instruments de mesure en milieu Acéricole (Use and Calibration of Measuring Instruments in Maple Production) provides sector-specific recommendations for properly selecting, using, and calibrating instruments used to measure °Brix, pH, conductivity, and colour, as well as to assess sap and syrup quality. For each instrument, the report presents the operating principle, accuracy, costs, calibration protocols, and expected values. It therefore serves as a reference tool to help maple producers and specialists better control their processes.

 

The guide, Les opérations de post-production de la filtration à l'entreposage du sirop d'érable (Post-Production Operations: From Filtration to Maple Syrup Storage), is an essential resource for professionals in the maple syrup industry. It provides comprehensive information on the post-production process, from the transformation of sap into syrup to the subsequent storage of the syrup. It covers good manufacturing practices, the different types of filtration—gravity, vacuum, or pressure—possible adjustments before packaging, particularly for °Brix and color, as well as guidelines related to filling, storage, traceability, and record keeping.


Two new posters were also unveiled!

The two posters are printed in a 16 x 23-inch format on glossy paper. They can be displayed in strategic locations throughout the sugarbush. These tools provide a practical visual reminder and can be annotated according to the needs of each maple operation.

The poster Pourquoi contrôler les risques lors de la fabrication de sirop d'érable? (Why Control Risks When Producing Maple Syrup?). This presentation outlines the primary risks that could potentially compromise the safety and quality of maple syrup, the management measures in place to mitigate these risks, and the critical points to monitor during each stage of production.



The poster "Principaux points de contrôle de procédé pour la production d'un sirop d'érable de qualité (Key Process Control Points for the Production of High-Quality Maple Syrup)" provides a summary of the elements to be controlled, the actions to be taken, and the targets to be achieved at each stage of the process.
